5. When the tofu is evenly coated, but still semi-moist, remove from heat.

Tofu Parmesan

1 package spaghetti
1 package firm tofu, drained
1 cup seasoned bread crumbs
2 cups grated mozzarella cheese
Olive oil
Spaghetti sauce (flavor is optional)


1. Preheat the oven to 350 degrees.
2. Prepare the spaghetti according to the directions.
3. While the spaghetti is cooking, cut the tofu into four even slices.
4. Use olive oil to lightly coat both sides of each tofu cutlet. Press the pieces into the bread crumb mixture and set aside.
5. Drain the spaghetti and evenly spread the noodles along the bottom of a shallow baking dish.
6. Pour a generous amount of spaghetti sauce over the noodles.
7. Arrange the tofu cutlets on top of the noodles. If desired, add extra sauce and cover with the grated cheese.
8. Bake for twenty minutes.

1 package silken tofu
1 cup chocolate soy milk
2 medium-sized bars dark chocolate
½ cup sugar


1. Melt the chocolate bars in a pan over low heat.
2. Add the soy milk and sugar and stir until dissolved. Remove from heat.
3. Pour the contents of the pan and the tofu into a blender. Blend until smooth.
4. Place the mixture in a glass container and freeze overnight before serving.
