Strawberry Cream Cake Recipe

1 recipe for Basic Yellow Cake from Scratch
1 quart fresh strawberries, rinsed, hulled and sliced
1/4 cup white sugar
3/4 cup excellent quality strawberry jam
1 recipe Sweetened Whipped Cream, see below
10-12 perfect large fresh strawberries, rinsed and patted dry, for garnish

How To Make and Decorate a Strawberry Cream Cake

1. Follow directions for the Basic Yellow Cake Recipe. Bake the yellow cake batter in two 9-inch cake pans. Cool cake layers completely as directed, and decorate as follows.
2. Slice one quart of fresh strawberries, and sprinkle with sugar. Let sit for 15 minutes.
3. Level off yellow cake layers to create a flat surface. Place one cake layer cut side up on a pretty cake platter. Spread evenly with strawberry jam, staying 1/2 inch away from the sides.
4. Smooth 1/3 of the prepared whipped cream over the jam, leaving a lip of whipped cream around the sides to hold the strawberries in.
5. Carefully arrange the sliced strawberries on top of the whipped cream, taking care not to let the berries and syrup drip down over the sides. If there seems to be too many strawberries, reserve the rest for the plated cake as a side garnish.
6. Place the remaining yellow cake layer cut side against the strawberries and cream, smooth uncut side facing up. Press down ever so lightly to seal.
7. Spoon the rest of the whipped cream in the center of the cake. Working with an off-set spatula, smooth the whipped cream on the top, and down and around the sides of the strawberry cream cake, sealing the cake all the way to the bottom of the plate. Take time to smooth the whipped cream and achieve a neat finish.
8. Place the strawberry cream cake in the refrigerator and chill until ready to serve.
9. Just before serving, prepare the perfect strawberries by slicing almost all the way to the green leaves, being careful not to cut all the way through.
10. Make 4-5 cuts, depending on how large the strawberries are. Carefully fan the strawberries out, and place evenly on top of the strawberry cream cake. Place one perfect red strawberry in the middle of the cake.
11. Serves 10-12.
12. Loosely cover with plastic wrap, and refrigerate any leftovers.

Sweetened Whipped Cream Recipe

2 cups cold heavy cream
1/2 cup powdered sugar
1/2 teaspoon vanilla extract

How To Whip Cream

1. Using a stand mixer or a hand-held mixer with a whip attachment, beat cream until almost stiff.
2. Add powdered sugar and vanilla and beat until stiff peaks form.
3. Refrigerate until ready to use.
