Mini Pizza Ham And Cheese And Bbq PiesPepperoni and cheese or ham and cheese; almost anything can be cooked in a pie shell, and turned into a healthy and delicious dinner.

Pies are easy to make, and make for a savory treat at desert or dinner. These individual pies are a delightful change of pace, creative, and a dinner the whole family will love.

Pie Dough

Each recipe makes 12 individual pies. A 12 cup muffin pan or cupcake pan, rolling pin, flour, table knife, and 2 refrigerated pie dough is all needed for these recipes (of course, these can also be combined in one large pie if desired).

Directions For Dough:

1. Preheat oven according to box (usually 425°).
2. Roll out 1 dough on a floured surface (be sure to flour the rolling pin).
3. Using a table knife or large round cookie cutter, cut a circle large enough to place inside a muffin cup (with a little left on the outside). Cut excessive overlap off. Repeat till all 12 cups have dough inside.
4. Bake for 8 minutes.

This is the process to prepare the dough for each of the following recipes. To make one large pie, simply place 1 rolled out piece of dough into a pie dish. Bake 9 minutes. Place in filling. Place second piece of dough on top. Cut several slits, make shapes, or leave the pie topless. Bake another 9-11 minutes. Cool and serve.

Pizza Pie

Ingredients:

2 rolls of refrigerated pie dough
36 pepperoni, sliced in strips
1 ball of mozzarella cheese, shredded or cut into pieces small enough to fight inside shell
12 tablespoons tomato sauce of choice
2 tablespoons butter

Directions:

1. Prepare Dough
2. Mix pepperoni and cheese in a medium bowl. Set aside.
3. Place 1 tablespoon of sauce in the bottom of each shell.
4. Put in pepperoni and cheese mix.
5. Place the top of the pie on top. Press edges together to close. Be sure to cut small slits, make face or shapes, or only cover half and place some cheese on top of the other half.
6. Cook 9-11 minutes on 400°. Spread butter over the top of each pie. Cool and serve.
This is great served beside a salad or seasonal fruits.

Ham and Cheese Pies

Ingredients:

2 boxed refrigerated pie dough
2 large pieces of sliced ham, shredded (or 2 packages of cubed ham)
16 ounces shredded cheddar cheese
1 can pineapples, drained (optional)
2 tablespoons butter

Directions:

1. Prepare dough.
2. Place ham, half the cheese, and pineapples in a medium bowl. Mix together.
3. Place a little cheese on the bottom of each pie crust. Then spoon in 2 to 3 tablespoons of the ham, cheese, and pineapple mix.
4. Put the top of the crust on, pinching sides together. Cut some slits to vent, and sprinkle a little cheese on top.
5. Cook 8-9 minutes at 400°. Spread butter on top of each pie, cool and serve.

Serve beside a light broccoli, cauliflower, or potato salad.

Barbeque Pie

Ingredients:

2 boxed refrigerated pie dough
About 1/2 pound of shredded barbeque, cooked or store bought
12 tablespoons favorite barbeque sauce
pickle chips (optional)
12 slices of provolone cheese, cut into circles to place in the bottom of each pie (optional)

Directions:

1. Prepare Dough.
2. Place 1 circle of cheese on the bottom of each pie.
3. Spoon in bbq, one tablespoon at a time. If using pickles, place on top of first tablespoon then put in the rest of the BBQ (use 2-3 tablespoons in each shell).
4. Pour sauce over BBQ.
5. Put the pie top on, and make slits to vent.
6. Cook 9-10 minutes. Cool and serve.

Serve along side baked beans, cole slaw, or corn on the cob.

All of these pies can be altered, and given personal touches. They make great party foods, and they can be made for lunch or dinner.
