Easy Potato Salad Baked Potato Salad And Patriotic Potato Salad
Potato salad is a great side dish no matter what season. It is easy to make and store. These no fuss recipes are no exception, and will make a great addition to any BBQ or gathering.
Summer Potato Salad
This potato salad recipe is simple and makes a great side dish for any summer gathering or family meal.
Ingredients:
3 lbs yellow potatoes (peeled and washed)
3-4 stalks of celery
1/4 cup bacon bits
1 cup buttermilk ranch dressing
1/4 cup mustard
2-3 tablespoons honey (more if desired)
1 tablespoon Worcestershire sauce
salt and pepper
Directions:
1. Peel and wash the potatoes. Cut in half or in 4ths. I like to wash them before and after peeling. Place in a large pot over high heat, and bring to a boil. Sprinkle some salt and pepper in the water, and continue to boil for 15 minutes. Just until the potatoes are tender, but not soft enough to mash.
2. Meanwhile, place cut celery stalks into a small food processor and pulse until finely chopped, or finely chop it.
3. Mix the dressing, mustard, honey, and Worcestershire sauce together in a bowl and set aside.
4. Drain the potatoes and cut the halve in half or fourths (depending on how small one wants the cuts). Mix in the celery. Then toss with the sauce.
5. Sprinkle salt and pepper over the potatoes and mix one more time.
6. Place in fridge for 2-4 hours. Then mix in the bacon bits and serve.
This is a great recipe, versatile, and one can use more or less sauce mix as desired. It s perfect for a summer cookout.
Baked Potato Salad
Everyone’s favorite steak side dish now comes in salad form. This is a great potato salad for a summer cookout, and can be made into a loaded potato salad. For now, it will remain basic.
Ingredients:
3 lbs yellow potatoes, washed (peeled or unpeeled) and cut into fours
1/2-3/4 cup greek yogurt
1/2-3/4 cup cream cheese, softened
(sour cream can be used in place of the yogurt and cream cheese)
3-4 tablespoons chives
Salt and pepper to taste
Directions:
1. Place potatoes in a large pot filled with water and bring to a boil. Boil 15-25 minutes, until soft but not soft enough to mash.
2. Drain the potatoes and let cool.
3. In a small bowl, mix the yogurt, cream cheese, and chives together well. Add salt and pepper to taste and mix in with the potatoes.
4. Place in the fridge for 2-4 hours or over night, or serve warm.
This is definitely a great recipe that will compliment any steak or burger.
Patriotic Potato Salad
This is the perfect salad for the 4th of July. It uses, red, yellow (or white), and blue potatoes. It adds festive color to the table and will be a sure hit dish.
Ingredients:
1 lb each of red, yellow, and blue potatoes. Washed, cut into fours and peeled or unpeeled
2 tablespoons chives
1 tablespoon chopped cilantro
1/2 tablespoon chopped parsley
1 cup grape tomatoes, cut in half
1 teaspoon each of salt and pepper (more if desired)
1 cup of buttermilk ranch dressing
Directions:
1. Bring potatoes to a boil in a large pot, drain and let cool.
2. Mix the chives, parsley, salt and pepper, and tomatoes together in a small bowl. Set aside.
3. Once the potatoes have cooled a bit, add the ranch dressing, then toss the rest of the ingredients together with the potatoes.
4. Serve.
Not only is this festive, but it is easy. With the help of some ranch dressing (which can be homemade if desired) or some olive oil and red wine or apple cider vinegar, a patriotic potato salad can turn into a grand finale at the 4th of July gathering.
