Chocolate Mousse Recipe

Chocolate mousse ingredients

Dark chocolate bar, 200 g
Egg whites, 3 (large eggs)
Golden caster sugar, 50 g (2 oz)
Double cream, 100 ml (3.5 oz)
Icing sugar (for dusting)
Any small crispy biscuits (to serve with mousse)

Chocolate mousse recipe

1. In a clean bowl, whip the double cream to a soft peak and keep aside
2. Chop up 150g of the chocolate bar and melt it in a bowl over a pan of hot water. When the chocolate is melted, take the pan off the heat but leave the chocolate bowl over the hot pan.
3. Grate the remaining 50g chocolate and keep aside
4. Using an electrical beater, whisk the egg whites to stiff peaks. Now whisk in the caster sugar a spoonful at a time until the mixture resembles a glossy meringue.
5. Take the melted chocolate off the pan of hot water. Take one spoonful of the glossy egg meringue and fold it into the chocolate.
6. Now tip the entire chocolate into the bowl of meringue and fold in lightly but thoroughly.
7. Fold in the whipped cream and 2/3rd of the grated chocolate
8. Divide the resulting chocolate mousse mixture into 6 small serving bowls (teacups are very elegant to serve this in). Chill for at least 2 hours or overnight.
9. Dust the chocolate mousses with icing sugar and sprinkle with the remaining grated chocolate. Serve with small crisp biscuits on the side. Bon apetit!

Note

It helps if the chocolate bar is chilled for a bit before grating.
You can replace dark chocolate with white chocolate to make white chocolate mousse.
An electrical beater makes things easier but you can also manage the same using a hand balloon whisk. Just keep that arm moving!
You can make this delightful and easy chocolate mousse a day before your dinner party and put away in the fridge. Have fun!
