Warm Up With Soup

It’s getting cold around here. Brrr.

When I went for my long run on Saturday, it was in the high 30s, and while I stayed warm enough in my running tights, fleece shirt and vest, and hat and gloves, when I got home all I wanted was a hot shower and a hot meal. Like soup.

It’s soup season! Warm up this week and all winter with a delicious veggie soup:

What’s your favorite kind of soup when the weather gets chilly? Mine is butternut squash soup, definitely. I love anything sweet.

Yum! I love soup. My husband isn’t a big fan but when the weather gets cold I enjoy having soup on hand. My favorite is vegetarian split pea, which I happen to be simmering on the stove right now. Your potato soup looks great. I’ll have to try that one next.

I love stew, although my Hubby doesn’t “get” why I make it so thick, the traditional way it was made by my family in Canada. Up there, it’s cold 90% of the time and beef stew was a mainstay. Since Hubby is from Mexico, posole is a traditional soup for family gatherings. We even had some over Christmas weekend :) I also like squash soups, I recently made a red kuri soup that was delightful and warmed everyone to their toes!

It’s so cool to think about how different cultures like their soups and stews. I can see why in Canada you’d eat a lot of soup. Red kuri soup sounds delicious! That’s a new one for me to try.

Yeah, if you like butternut you should look for red kuri squash. It’s not exactly pretty on the outside but the flesh is a deep orange. Roast the seeds too!

Thanks! The potato soup tastes kind of like mashed potatoes in soup form. Nice and thick and soothing.
